Hamburg-Winterhude. This is where we are at home. A location that has been in use for over three decades and continues to generate new ideas. In 1989, Wille Brass started here with a small kitchen and a bar table. The culinary discoveries were new and quickly became an insider tip for gourmets. In order to accommodate an ever-increasing number of guests, the premises were expanded five years after the start. Initially used for wine trading and offices, it became Traiteur Wille’s bistro in 2003.

This is where Christian Rose joined the team. As a temporary worker with a curiosity for cooking, a zest for action, and the prospect of tips. Just what you do as a student to make ends meet in the big city. And as life would have it, the result was a story of entrepreneurial succession. Christian Rose took over the bistro in 2010. Traiteur Wille not only grew into a limited liability company, but also became a destination for fine cuisine. So in 2013, it was time for a new look. We completely gutted the premises on Gottschedstraße and opened the Bistro Kitchen 53° Nord.

And for all the many other things you need as a caterer and event organizer, we moved into a logistics warehouse in 2015.

We are constantly moving forward. With more and more locations and events and, above all, many people accompanying us along the way. And wherever we go, we never forget where we came from. Back when it all began. As something new. With culinary discoveries from Traiteur Wille.

By the way, we are sometimes asked what a traiteur does and how to pronounce it. The French word “traiteur” has a very long tradition. Once the cook of the ruling class, today a preparer and supplier of fine food for everyone who likes to celebrate together. Traiteur is pronounced like “trätör.” And Wille like “Wille.” Or simply Catering Couture. Because that’s where you’ll find us too. At the top of Google and other search engines. And of course live – at your next celebration.
